Ingredients

  • Sliced onions 4
  • Chopped ginger 1inch
  • Cashew nuts 5
  • Watermelon seeds 1tbsp.
  • Chopped tomatoes 5
  • Salt to taste
  • Ghee 2tbsp.
  • Oil 6tbsp.
  • Potato cubes 1 cup
  • Cauliflower ½ cup
  • Diced green bell pepper ½ cup
  • Diced carrots ½ cup
  • French beans ½ cup
  • Green peas ½ cup
  • Diced paneer 200gms.
  • Soaked Kashmiri dry red chillies 4 + water
  • Garlic cloves 4
  • Cumin seeds 1tsp.
  • Cloves 2
  • Cardamom 2
  • Bay leaf 1
  • Cinnamon stick 1 inch
  • Red chilli powder 1 tbsp.
  • Coriander powder 1tbsp.
  • Turmeric powder ¼ tsp.
  • Hot water 1.5 cup
  • Salt to taste
  • Kasuri methi 1 tsp.
  • Garam masala 1 tsp.
  • Lemon juice 1 tsp.
  • Cilantro leaves

Method

  • For puree
  • Heat oil in a pan, add sliced onions.
  • Cook till onion turns golden and caramelized
  • Add chopped ginger, cashew nuts, watermelon seeds and mix everything well
  • Add chopped tomatoes and cook till the tomatoes become soft
  • Let the mixture cool down for sometime
  • Now add salt and grind the mixture for gravy and Keep the gravy aside
  • For Veggies
  • Now heat a pan, add oil, potatoes and cauliflower and sauté at high flame till it turns golden brown
  • Now add green bell pepper, carrot, French beans and peas
  • Sauté on high flame and add salt
  • Now take the veggies in a plate and keep aside
  • Now in a pan add oil and pieces of paneer and cook till it turns golden brown from both the sides
  • Take pieces of paneer in a plate
  • Now to add red color to veg jaipuri, take soaked dry chillies and garlic cloves and grind it
  • For tempering
  • Heat a pan, add ghee, oil, cumin seeds, cloves, cardamom, cinnamon stick and bay leaf, sauté them well
  • Add turmeric powder, coriander powder, red chilli powder and saute at low flame
  • Add paste of dry red chillies and garlic and sauté it till it leaves oil on side
  • Now add the puree of onion and tomato
  • Cook it well till it absorbs water and leaves oil on the sides
  • Now add vegetables and paneer which were sauté before to the gravy
  • Add salt to taste and mix everything well
  • Add hot water and mix it well
  • Put the lid and let it cook for 3-4minutes at low flame
  • Now to add more taste add kasuri methi and garam masala and mix it well
  • Add lemon juice and garnish with cilantro leaves and mix it well
