Steam Dhokla

Description

Steam dhokla are popular steamed cakes made using rice and urad dal. Also, there are hundreds of variation to the dhokla recipe just like idli variations. Dhokla is a soft and fluffy steamed snack from the Gujarati repertoire. This all-time favourite is enjoyed as a starter, as a tea-time snack, or even for breakfast. Ingredients & Method

Ingredients

  • Urad dal – 1 cup
  • Rice – 3 cup
  • Flattened rice (poha) – ½ cup
  • Fenugreek seeds – 1 tsp
  • Water – 3 cup
  • Oil – 1 tsp
  • Ginger green chilli paste – 1 tsp
  • Salt as per taste
  • Fruit salt – ½ tsp
  • Lemon juice – 5 to 6 drops
  • Water – 2 tbsp
  • Black pepper powder & red chilli powder – for sprinkle
  • For tempering:
  • Oil – 1 tbsp
  • Mustard seeds – 1 tsp
  • Cumin seeds – 1 tsp
  • Sesame seeds – 1 tsp
  • Asafoetida – a pinch
  • Curry leaves – 6 – 7

Method

  • Take a bowl add urad dal, water as required and wash it properly. Remove extra water from it.
  • Now, take another bowl add rice and wash it twice completely. Remove water from it. Add flattened rice, fenugreek seeds and water.
  • Then, add clean water and soak it for 6 hours. After 6 hours it completely soaked and transfer into mixing jar.
  • Take urad dal in mixing jar, and blend it smoothly. Transfer the batter into a bowl.
  • Now, take soaked rice and transfer into mixing jar, and blend it smoothly. Mix it well.
  • Cover bowl and keep in warm place for 12 hours. After 12 hours check it. Its gets perfectly fermented.
  • Take half batter in a bowl add oil, ginger green chilli paste, salt to taste and mix it well.
  • Add fruit salt and lemon juice and mix it properly.
  • Now take dhokla stand and grease the plate with oil. Pour batter into the plate and tap once. Sprinkle black pepper powder and red chilli powder
  • Pre boiled water on high flame & put dhokla plate on it. Cover it for 10 minutes. After 10 minutes check it with knife weather it’s ready or not.
  • After cook, cool down for 2 minutes and cut them into square piece.
  • For tempering, take a small wok add oil, mustard seeds, cumin seeds, sesame seeds, curry leaves, and asafoetida let them temper properly.
  • Pour tempering on the dhokla properly. Add some cilantro leaves.
  • Ready to serve. (Serve with green chutney and red garlic chutney.)
