Khichdi can be prepared in various ways. Today we will make Rajwadi Khichdi recipe. We have added whole dried spices in it to give it a nice spice and have given the Khichdi a double tadka which gives an amazing taste to the Khichdi. Ingredients

  • Rice – 2 cup
  • Mix dal – 1 ½ cup
  • Water as required
  • Oil – 3 tbsp
  • Mustard seeds – ½ tsp
  • Cumin seeds – ½ tsp
  • Cloves – 3 to 5
  • Cinnamon – 2
  • Bay leaf – 2
  • Black pepper – 6 to 7
  • Dry red chilli – 2
  • Curry leaves – 10 to 12
  • Chopped onion – 2 nos
  • Chopped garlic – 1 tsp
  • Asafoetida – ½ tsp
  • Sliced green chilli – 2 nos
  • Spring onion – ½ cup
  • Tomato – ½ cup
  • Chopped potato – 1 no
  • Chopped brinjal – ½ nos
  • Green peas – 1 tbsp
  • Chopped capsicum – 1 nos
  • Chopped carrots – 1 nos
  • Bottle gourd – ½ nos
  • Turmeric powder – 1 tbsp
  • Salt to taste
  • Water – 3 to 4 cup
  • Red chilli powder – 2 tbsp
  • Coriander powder – 2 tbsp
  • Garam masala – 1 tbsp
  • Cashew – 4 to 5
  • Raisin – 4 to 5
  • Spring onion
  • Clarified butter

Method

  • Take a bowl add rice, mix dal and wash it properly. Then remove water from it.
  • Now take a handi add oil and heat up the oil then add mustard seeds, cumin seeds, cloves, cinnamon, bay leaf, black pepper, dry red chilli, curry leaves, chopped onion, chopped garlic and sauté it well.
  • Then add asafoetida, green chilli and mix everything properly. Now add spring onion, tomato and mix it well.
  • Now add mix veggies like potato, brinjal, green peas, capsicum, carrots, bottle gourd and mix it properly.
  • Now add some spices like turmeric powder, salt to taste and mix it well. Add water, red chilli powder, coriander powder, garam masala and mix it properly.
  • Then, cover the handi and cook for 5 minutes. Now open it and mix it well.
  • Now add soaked rice & dal and mix everything properly. Then cover it and cook for 8 to 9 minutes and mix well.
  • Now add some cashew nuts, raisin, sprinkle some spring onion and mix everything well.
  • Put coal in it and pour clarified butter on the top of coal. Cover the handi for 2 minutes and now open the lid. Remove the coal and mix everything properly.
  • Tasty rajwadi khichdi is ready to serve.
