Mexican Rice

Description

Flavoured and healthy rice-based side dish recipe prepared with tomatoes and vegetable stock. It is popular dish in mexico and spain but in india it is mainly served for mains and as lunch box recipe. Ingredients & Method

Ingredients

  • Oil + Butter – 1 + 1 tbsp
  • Garlic (chopped) - 1 tbsp
  • Onions (chopped) – ½ cup
  • Chopped tomato – 2 nos
  • Salt to taste
  • Powdered spices:
  • Red chilli powder – 1 tsp
  • Coriander powder – 1 tsp
  • Cumin powder – 1 tsp
  • Oregano – 2tsp
  • Red chilli flakes – 2 tsp
  • Ketchup – 1 tbsp
  • Soaked rice – 1 cup
  • Sweet corn – 1/3 cup
  • Yellow bell pepper – 1/3 cup
  • Green bell pepper/Capsicum – 1/3 cup
  • Red bell pepper – 1/3 cup
  • Fresh jalapeno – ¼ cup
  • Cooked red rajma beans – ½ cup
  • Vegetable stock/hot water – 2 cups
  • Fresh coriander (chopped) – 1tbsp

Method

  • Take a mixing jar adds tomato and grind it nicely.
  • Set a wok on medium heat, add oil & butter, let the butter melt and turn the flame to high heat, add onion stir & cook until the onions are light golden brown in colour. Now add garlic and cook for a minute.
  • Further add red bell pepper, green bell pepper and yellow bell pepper and mix it well.
  • Now add fresh jalapeno and mix it properly. Then add tomato puree and cook for a minute.
  • Add tomato ketchup and splash of water to get proper consistency. Cook well on high flame.
  • Then add coriander powder, red chilli powder, cumin powder, red chilli flakes, oregano, and salt to taste and stir and cook for a minute.
  • Now add sweet corn and mix it well. Add cooked rajma beans and mix it well.
  • Now, add the boiled rice, stir gently while mixing well.
  • Finish by adding some freshly chopped coriander leaves and mix well. Cover and cook it for 5 minutes.
  • Mexican Rice is ready to serve.
