Khaman
Description
You don’t have to be from Gujarat to have tasted a khaman. A thick fermented gram flour and cut into squares tempered with mustard seeds and garnished with fresh coriander and scraped coconut – a khaman is Gujarat’s pride. It can be crumbed and served with accompaniments like assorted chutneys, fried green chillies and a delicious raw papaya salad. For batter:
- Gram flour – 1 ½ cup
- Citric acid– 1 tsp
- Grinded sugar – 1 tbsp
- Water as required
- Baking soda – 1 tsp + Water – 1 tsp
- Oil – 2 tbsp
- Asafoetida - a pinch
- Salt to taste For tempering:
- Oil – 2 tbsp
- Mustard seeds – 1 tbsp
- Curry leaves – 7 to 8
- Asafoetida - a pinch
- Green chilies – 2 to 3
- Water – 1 cup
- Sugar – 3 tbsp
Method
- Let’s start to make delicious khaman, first of all take a large bowl add gram flour, citric acid (nimboo ke phool), grinded sugar, oil, asafoetida, salt to taste, water and whisk it properly.
- When you stir the batter remember that there should be no lumps in it.
- Make smooth batter and it should be in pouring consistency.
- Accept citric acid we can use lemon juice and vinegar.
- Meanwhile for steaming takes a large bowl and add water to heat up for 4 to 5 minute with cover it forms all the side.
- Before steaming add baking soda in water and add that mixture into the batter. And mix it only in one direction for 2 to 3 minute.
- Then pour batter into greased plate and put it into a boiling bowl with help of stand and spread it nicely. And fitted cover it from all the side.
- Steam at least for 30 minutes. After that batter cooked or not checks it by knife or tooth pin.
- After cook, cut khaman into square shape pieces.
- For tempring, take a pan and add oil, mustard seeds, & once it starts to crackle then add asafoetida, curry leave, green chilies, and cook for 2 - 3 minute.
- Now add water and sugar. Mix it well and cook it for 2 – 3 minute.
- Pour hot tempring on khaman. Spread well on khaman pieces and garnish with cilantro leaves.
