Ingredients & Method

Ingredients

• Coarse rava sooji/ semolina 1 cup

• Sour curd ½ cup

• Water 1 cup

• Salt to taste

• Eno fruit salt 1 tsp.

• Oil 3 tsp.

• Mustard seeds ½ tsp.

• Urad dal ½ tsp.

• Chana dal ½ tsp.

• Curry leaves 6-7

• Chopped green chilli 2

• Ginger paste ½ tsp.

• Chopped onion 1 cup

• Green bell pepper ½ cup

• Grated carrot ½ cup

• Cilantro 2 tbsp.

Method

• In a large mixing bowl take sooji (semolina), curd and water. Mix it well.

• Allow the batter to rest for 30-40 minutes, or until the rava absorbs water well.

• Add oil in a pan, once oil is heated add mustard seeds, ginger paste, urad dal, chana dal.

• Add few curry leaves, chopped green chillies. Sauté for a minute.

• Then add onion and cook till it becomes translucent.

• Add green bell pepper, carrot and sauté until the vegetables become slightly soft.

• Add the masala mixture to rava batter add chopped Cilantro and salt. Mix it well.

• Now add eno and some water just before preparing appe and mix it well in the batter.

• Heat appam pan, add few drops of oil inside the round moulds.

• Now add the appam batter to each round mould in the pan.

• Cover and simmer for 3 minutes on low flame or until appam gets cooked slightly.

• Once the base turns golden, flip it over to the other side using a spoon.

• Simmer further and cook on low heat until it turns golden browns.

• Appam are ready to serve instantly.
